1 14 oz. bag of Sweetened Coconut
1 14 oz. Can of Sweetened Condensed Milk
1 tsp Vanilla
1 pinch (1/8 tsp) Salt (preferably kosher)
Mix all above ingredients together in a bowl until well incorporated with each other. Using an ice cream scoop, scoop out each Macaroon pressing the scoop against the side of the bowl. Place on a cookie sheet lined with a Silpat or parchment paper. These are real gooey and sticky so you want to make sure you have some kind of lining down.
Take one of your racks in the oven and place toward the top 3rd level. Preferably one right below the broiler level to get a good brown color on them.
Place the Macaroons in the oven at 350 degrees and bake for about 20 minutes. Once they have a good golden brown color on them, pull them out and place on a cooling rack to allow them to set. And enjoy!
